southwest chicken.

4 boneless, skinless chicken breasts (defrosted) or 8 chicken cutlets (defrosted)
3 T olive oil
1 lime, juiced
1 T cumin
2 t. chili powder
1 t. oregano
1 t. paprika
1 t. salt
1/2 t. pepper

Mix spices together in a shallow pan. Place chicken breasts in between layers of plastic wrap. Pound chicken with a mallet until 1 inch thick. Juice one lime. Brush each chicken breast with lime juice then roll each chicken breast in the spices. Heat olive oil in a skillet over med heat. Cook the chicken a few minutes on each side. Chicken is done when the internal temperature reaches 170 degrees. Juices should run clear when you cut into it. This chicken is great as a main dish or you could dice or shred it and toss into any dish of your choice.
