hummus.

I'm not quite sure where I got this recipe from, I have adapted it to my liking:

2 cloves garlic
1/4 cup lemon juice
1/4 cup water
1 14 oz. can chickpeas, rinsed and drained
1/2 cup tahini
1 tsp. sea salt
2 tbsp. olive oil
-Process in a food processor until smooth.

You can also vary the recipe by adding roasted red peppers or substituting black beans for the chickpeas to make black bean hummus!

white chicken chili.


My mother-in-law shared this recipe with me. Once you try it, you'll be glad I'm sharing it with you!

3 cans white beans and juice (suggested: Great Northern)
1 can rotel (tomatoes and green chilis)
1 t. cumin
1/2 t. oregano
4 c. cooked, shredded chicken (about 3 breasts)*
3 c. (or 8 oz) montery jack cheese, shredded (optional)

Combine beans, rotel, spices and cooked, shredded chicken. Bring to a boil, reduce heat to low and simmer for 30 minutes. Add cheese and stir until melted. Serve warm with sour cream, salsa, sharp cheddar, green onions, cilantro, etc. Serves 4 to 8 bowls- depends on how big of a bowl you can eat ;)

*To get a good, moist shredded chicken: bring water or chicken broth to a boil in a saucepan, drop in pieces of chicken, put a lid on your pan, and turn the heat to low. Simmer for 30 minutes (longer for frozen chicken; also it depends on the size of chicken pieces). After 30 minutes, check to make sure chicken is cooked through by slicing the biggest breast right down the middle. If done, drain and let cool. Shred chicken with clean hands once it has cooled.

valentine's day brownies.



Just in time for Val day!
This is a Valentine's Day
staple in the Boyle home!




The Easy Way-
1 Brownie box mix
1 container Cream Cheese icing
1 can tart Cherries or Cherry pie filling

Make the brownies according to box directions. Let them cool in the pan. Frost brownies with cream cheese icing. Pour your choice of cherries over top! Cut squares and serve or refrigerate until ready to serve.

The Homemade Way-
Brownies:
4 sq unsweetened chocolate
1 stick and a 1/2 stick butter
2 c. sugar
3 eggs
1 t. vanilla
1 c. flour

Preheat oven to 350. Grease a 13 by 9 pan. Heat chocolate and butter on low heat; stir frequently. Add sugar. Take off heat. Blend in eggs and vanilla. Stir in flour. Pour batter into prepared pan. Bake 30 minutes. Let cool.

Cream Cheese Icing:
8 oz cream cheese, softened
2 c. powdered sugar
3 T milk
1 t. vanilla

Beat together ingredients. If too thick, add more milk. If too thin, add more powdered sugar. Ice cooled brownies. Top with cherries of your choice! Cut squares and serve or refrigerate until ready to serve.
